Muffin "Cioccolato Modicano agli Agrumi" e salsa di zabaione

Its Easter, Modica just had an extremely succesful Eurochocolate event with more that 100 000 visitors in 3 days, and IMBB 13, the classic food blogging event, is focusing on muffins. The choice therefore was clear, a muffin with the most interesting new chocolate tasted during Eurochocolate. Well, actually the choice was not that easy. We tasted lots of interesting chocolates, both from Modica and from the rest of Italy. However, something that did impress us particularly was the "cioccolato modicano agli agrumi". The classic "cioccolato modicano", with orange, lemon and mandarin. As the chocolatier explained to us, it took them a long time to find just the right proportions since the lemon tended to make the whole thing too acid. However, they did hit the sweet spot and we thank them for it! So, armed with two slabs of chocolate on to the recipe. For the muffins: 250g of chocolate (in our case the modicano one, but you can just use any good dark chocolate) 250g of butter 120g of sugar (if using dark chocolate you can use more sugar, in our case the cioccolato modicano already has sugar in it) 100g of flour 5 eggs 1 spoon of yeast Melt the chocolate in a bain marie. Soften the butter and add sugar, eggs (one at a time), the flour and the yeast. Then add the chocolate with butter and all the rest and mix until you have a nice consistent homogeneous cream. We used aluminium forms, which were buttered and dusted with flour. Fill the forms and place in the oven at 200 degrees celsius for about 10 minutes.

For the salsa just mix and egg yolk with about 60g of sugar and three tablespoons of marsala. Mix well over a baine marie until you get a nice frothy sauce.

The result was truly fantastic, the only hintering factor is that this Easter is turning out to be the most chocolate intensive easter ever...April must be declared a chocolate free month...
