Happy Birthday with a Sicilian Tomato cake

Even this season, our cookery courses are giving us the chance to meet very interesting people. It is always a pleasure to introduce our guests to the culinary wonders of Sicily and the many other great things the island has to offer.
With many of them, we keep in touch even years after they have visited our school and this is simply fantastic. This said, this post should not come as a surprise to you.
We dedicate it to our new friend Ibby and her three great friends on her birthday. She had a fantastic sense of humor which made our classes such a fun and a great passion for Sicilian tomatoes. She simply could not resist trying them while we were cooking and, of course, she was simply certifying their quality to make sure we all got the best possible food;)!
This is why I thought about making a savoury tomato Happy Birthday cake on her birthday thinking about her. Pity the internet is not good enough to send each other solids as yet;)!
Ibby's Sicilian Tomato Birthday Cake
The cake has four layers of brisee pastry with four different flavours:
saffron and oregano, to represent the mediterranean food culture she loves so much;
poppy seeds, as an homage to Jewish baking culinary tradition;
mustard seeds, the so called "spice of nations" because it is so universally used, showing how food unites us all.
The cake has three different creamy stuffing: Sicilian Tuna, Basil and Tomato, Sweet Corn and Arugula.
To finish it off, of course, Sicilian Pachino and Neapolitan Piccadilly tomatoes on top.
