Chocolate, wine and grapes cakes. Vendemmia 2011

To welcome the new "vendemmia" (grape harvest season) I worked on a cake of mine, a 100% cocoa and Frappato wine cake, and developed a new recipe for individual small, muffins like cake with a heart of "drank" grapes.

I chose red grapes produced in Mazzarrone, cleaned them, cut them in half and removed the seeds. Then I soaked them in Nero d'Avola passito wine for a couple of hours in the fridge.

Then I prepared the a 100% cocoa and Frappato wine cake mixture. I buttered 6 ramekins, filled them with the chocolate cake mixture and placed 2-4 grapes and continue covering with other cake mixture.
I baked them for 15-20 minutes in a preheated oven at 160C°.

Once out of the oven, I let them rest and then spooned some chocolate and Frappato wine sauce on top.

The result was excellent, I am really proud. Did not get the chance to take a picture of the core part of the cake with grapes, as everyone finished them in a couple of bites;)!

I served it with a great locally roasted and blended coffee, Moak's Gusto Bar blend. With its special taste with nuances of liquorice and chocolate and its persistent aroma, it was simple perfect with my cakes.
